“A Winter Poem” by Lewis Carroll


Tucked under the eaves on the third floor of the Rivertown Inn is a cozy, warm and entertaining bedchamber named for Lewis Carroll, aka Charles Dodgson.  Lewis Carroll, the famed author of the Alice in Wonderland books, was a multifaceted man: photographer, mathematician, minister, writer and poet.  This excerpt from “Through the Looking Glass, and what Alice Found There” was first published in 1871 and is very appropriate for this month of winter:

A Winter Poem

I wonder if the snow loves the tree and fields, that it kisses them gently?  And then it covers them up snug, you know, with a white quilt; perhaps it says “Go to sleep darlings, till the summer comes again.”

We chose this author as our decorating inspiration because the room is quirky, with odd under-the-eaves roof lines, and a charm about it that just spoke the name, “Alice.”  This comfortable space – while the smallest bedchamber in the inn – has every amenity that the other guest rooms have for winter enjoyment: a warm fireplace, a beautiful hot tub, a pair of cozy robes and many interesting books by as well as about the author.

Chef Ray’s Recipe of the Month: Fresh Mango Salad


This is a great summer salad and the perfect side for grilled fish and meats. The flavor profiles are that of Thailand with the combination of sweet and spicy. It is incredibly easy and fun to make!

Fresh Mango Salad

For 4 People

Ingredients:

1 large, ripe mango, peeled and sliced or diced

½ small red onion, very thinly sliced

½ Cup washed and roughly chopped cilantro leaves

1 small red Thai chili very finely chopped (de-seed if you like for less spice)

¼ Cup roughly chopped mint

1 Tablespoon Rice Vinegar

2 Green onions thinly sliced

Juice  ¼ of a fresh lime

Salt and pepper to taste

Method:

Simply combine all of the ingredients in a bowl and serve!

Morel Fest

The 2010 morel season is once again upon us! Trees have begun to bud and the springtime morel craze inspires unbelievable food. This culinary gem has been glorified by Chef Jim in his many years creating menus and recipes for his award-winning morel dinners at The Bayport Cookery. Rarely did Chef Kyndberg create the same dish twice, and tonight he will once again treat us to a menu featuring his favorite ingredient – the morel. Five beautiful courses will be created and paired exquisitely with wine. This is not a class to be missed! As a bonus, morels can be purchased this evening – call ahead to reserve.
